Turkish pide, often referred to as ‘Turkish pizza’, is a delicious and satisfying flatbread topped with various ingredients. Known for its boat-like shape and varied toppings, this traditional Turkish dish is a favorite across the globe. Whether you’re in the mood for something meaty, vegetarian, or simply want to try a classic, Turkish pide offers a unique and delightful culinary experience.

Ingredients

  • 500 grams all-purpose flour
  • 250 ml water
  • 10 grams yeast
  • 10 grams sugar
  • 10 grams salt
  • 30 ml olive oil
  • 200 grams ground beef or lamb
  • 1 medium, finely chopped onion
  • 1 small, chopped tomato
  • 1 small, chopped green bell pepper
  • to taste spices (like paprika, cumin, and black pepper)
  • for garnish fresh parsley
  • 1, beaten egg (for egg wash)

Instructions

  1. In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy.
  2. In another bowl, mix together the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. While the dough is rising, prepare the filling. In a skillet, heat some oil and sauté the onions until translucent.
  6. Add the ground meat to the skillet and cook until browned. Stir in the tomatoes, bell pepper, and spices, cooking for another 5-7 minutes.
  7. Once the dough has risen, punch it down and divide it into equal portions (around 4 for medium-sized pide).
  8. Roll each portion into an oval shape on a floured surface and place them on a baking sheet lined with parchment paper.
  9. Spoon the meat mixture onto the center, fold the edges over to form a boat shape, and pinch to seal.
  10. Brush the edges with the beaten egg for a golden finish.
  11. Bake in a preheated oven at 220°C (428°F) for about 15-20 minutes or until the edges are golden brown.
  12. Garnish with fresh parsley before serving.
