Ingredients
- 500 grams all-purpose flour
- 250 ml water
- 10 grams yeast
- 10 grams sugar
- 10 grams salt
- 30 ml olive oil
- 200 grams ground beef or lamb
- 1 medium, finely chopped onion
- 1 small, chopped tomato
- 1 small, chopped green bell pepper
- to taste spices (like paprika, cumin, and black pepper)
- for garnish fresh parsley
- 1, beaten egg (for egg wash)
Instructions
- In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy.
- In another bowl, mix together the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- While the dough is rising, prepare the filling. In a skillet, heat some oil and sauté the onions until translucent.
- Add the ground meat to the skillet and cook until browned. Stir in the tomatoes, bell pepper, and spices, cooking for another 5-7 minutes.
- Once the dough has risen, punch it down and divide it into equal portions (around 4 for medium-sized pide).
- Roll each portion into an oval shape on a floured surface and place them on a baking sheet lined with parchment paper.
- Spoon the meat mixture onto the center, fold the edges over to form a boat shape, and pinch to seal.
- Brush the edges with the beaten egg for a golden finish.
- Bake in a preheated oven at 220°C (428°F) for about 15-20 minutes or until the edges are golden brown.
- Garnish with fresh parsley before serving.
