Ingredients

  • 2 large, ripe tomatoes
  • 1 medium cucumbers
  • 1 red bell pepper
  • 1 small onion
  • 1, optionally green chili pepper
  • a handful, finely chopped parsley
  • a handful, finely chopped mint leaves
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • to taste salt
  • to taste black pepper
  • 1 teaspoon, optional red pepper flakes

Instructions

  1. Start by washing all the vegetables thoroughly under cold water.
  2. Dice the tomatoes, cucumber, red bell pepper, onion, and green chili (if using) into very small pieces.
  3. In a large bowl, combine the diced vegetables.
  4. Add the finely chopped parsley and mint leaves to the bowl.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, black pepper, and red pepper flakes (if using) until well combined.
  6. Pour the dressing over the chopped vegetables and mix gently until everything is well coated.
