Ingredients

  • 500 grams pasta
  • 3 tablespoons olive oil
  • 1 medium, chopped onion
  • 3 cloves, minced garlic
  • 1 medium, diced bell pepper
  • 1 medium, diced zucchini
  • 1 medium, diced carrot
  • 2 medium, diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon red pepper flakes
  • to taste salt
  • to taste pepper
  • 2 tablespoons, chopped (for garnish) parsley

Instructions

  1. Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced bell pepper, zucchini, and carrot to the skillet. Sauté until the vegetables begin to soften, about 5 minutes.
  5. Mix in the diced tomatoes and tomato paste, followed by the red pepper flakes, salt, and pepper. Let the mixture simmer for about 10 minutes.
  6. Combine the cooked pasta with the vegetable sauce, tossing to mix everything thoroughly.
  7. Serve the pasta hot, garnished with fresh chopped parsley.
